I know it is hard to come up with lunch ideas to take to work but when I stumbled upon this recipe as a healthy lunch alternative I found that it was super easy to make and is to die for yummy. You can make the stuffed sweet potato the night before if you have time and just warm it up the next day at lunch and it is still good! This meal is so yummy and definitely fills you up.
